The Southern Yam




Ingredients:

Organic sweet potatoes or yams
-
Roasted pecans
-
Pure maple syrup
-
Cinnamon
Directions:

Preheat oven to 400 degrees
-
Line baking sheet with aluminum foil. Wash then pierce root vegetables several times with sharp knife.

Place vegetables on lined baking sheet and bake until soft (up to an hour depending upon size of root vegetable).
-
When done split open potato and top with 1-2 tablespoons of chopped pecans
-
Finally drizzle 1-2 tablespoons of maple syrup over nuts and sprinkle on cinnamon to finish it off.
