
Mediterranean Potato Salad

I hope you enjoy this recipe. It is a rich flavored salad which is great to eat this time of year. The subtle flavor of the golden potatoes mixes well with the acrid flavor of balsamic vinegar. But most importantly, it's chock full of nutrients to keep your immune system running smoothly when the stress of the holidays is in high gear like in our house today!

Ingredients

1 red bell pepper cut in small bite sized pieces

4-6 cups lettuce-- I used Butter lettuce-precut

1 small sweet onion chopped

1 cup of small golden potatoes, cooked and cut in half to quarters

1/2 cup Kalamata olives quartered

salt and pepper to taste

4 Tablespoons roasted pine nuts

Directions:
Assemble salad using lettuce, bell peppers, pine nuts, onions and olives. Place warm cooked potatoes in mixing bowl. Add 1/4 cup of vinaigrette dressing to potatoes and gently rotate bowl with hands making small circles until potatoes are coated. Add to salad. Add additional salt, pepper and dressing as desired.

Balsamic Vinaigrette Dressing

1/2 cup olive oil
-
1/3 cup balsamic vinegar

1 teaspoon Dijon mustard
-
1/2 teaspoon oregano
-
salt and pepper to taste

Directions: Whisk first 4 ingredients in bowl until emulsified. Add salt and pepper to taste.
