Creamy Vegan Penne Pasta

In this recipe, you won’t miss the meat.  It is chock full of flavor and nutrition.  I’ve taken advantage of a relatively new pasta brand (Banza) that is made, in this case, from chickpeas.  Using this product helps to increase the protein and fiber content of any meal nicely without the addition of meat.  The olive oil and nutritional yeast help develop a creamy texture when mixed with the lemon juice and starch from the pasta.

Gather Ingredients:

  • 1 tablespoon nutritional yeast

  • 2 tablespoons of chives chopped

  • 1 teaspoon garlic powder

  • 2 teaspoons of oregano

  • Salt and pepper to taste

  • 2 cups of canned artichoke hearts in water, chopped

  • 1 package of Banza brand penne pasta

  • 3 tablespoons of olive oil

  • Juice of 1 small lemon

  • 1/2 cup parsley chopped

Preparation method

 

Cook pasta according to package directions, drain water and place pasta into a serving bowl.  Add olive oil and toss.  Add nutritional yeast, garlic powder, oregano and salt, and pepper and mix well.  Add artichoke hearts, chives, and lemon juice and combine until uniform.   Lastly, top with parsley.
