Watermelon Salad

The age-old art of picking a good watermelon doesn’t have to be complicated.  Simply pick a heavy piece of fruit that feels firm and has a deep yellow-colored field spot which helps to indicate ripeness and hence sweetness.  Another method that can help you choose a ripe watermelon is the thump test which has always somewhat perplexed me, however.   Using this method, watermelon is said to be at its peak when you can hear a ‘punk,’ as opposed to ‘pink’ or ‘pank’ when you flick the melon with your fingers.”  

Of course, just biting into a freshly cut watermelon is one of the best ways to enjoy this fruit, however, watermelon works quite well as an ingredient in recipes too.  Give this recipe a try.  It is a simple yet tasty way to combine watermelon creating a light summer salad.

Ingredients:

  • 1 mini watermelon or approximately 6 cups cubed

  • 1/2 cup feta cheese, crumbled

  • 6-8 basil leaves julienned

  • 4 tablespoons of EVOO (extra virgin olive oil)

Technique: Combine all ingredients and mix until well blended
