Jicama Mango Salad
This salad is a little sweet and a little spicy. It can be eaten as a side accompanying grilled fish or chicken.
1 medium jicama, peeled and cut into match stick pieces
1 large mango, peeled and chopped
1 cucumber peeled and chopped
1 lime- the juice of
1/2 cup cilantro chopped
1/8 teaspoon cayenne pepper, ground
1/4 teaspoon ground sea salt
Peel and chop mango, jicama, and cucumber and mix together in large bowl. Add the juice of one fresh lime, the cilantro, and the sea salt and cayenne pepper and mix until blended evenly.
Enjoy as a side to accompany grilled fish or chicken.
