Red Quinoa and Black Grape Salad

Ingredients list:

  1. 1 cup of quartered sweet black grapes

  2. 1 cup of cooked red quinoa

  3. 3 cups of raw chopped spinach

  4. 1/4 cup of chopped sweet onion

  5. 1/2 cup of roasted unsalted chopped hazelnuts (Use a high-powered blender to easily chop)

  6. 1/2 tsp salt

Dressing:

1/2 cup of walnut oil emulsified in 1/4 cup of balsamic vinegar

Directions:

  1. Prepare quinoa according to package directions.

  2. While quinoa is cooking make the dressing by:

    1. In a large mixing bowl add 1/2 cup of walnut oil to 1/4 cup balsamic vinegar and 1/2 teaspoon salt and whisk until blended to a creamy consistency.

  3. Add grapes and onions to mixing bowl and let marinate in the dressing.  After quinoa is finished cooking, let it cool slightly to room temperature and add to dressing.  Finally, add chopped spinach and hazelnuts to the mixture and toss until evenly coated with dressing.
