Grape Cranberry Crostini
This dish with its flavors of the season serves as a wonderful appetizer during thanksgiving or Christmas.
Ingredient List:

2 cups of small round grapes like Thomcord

1/3 cup of dried cranberries

1/2 cup of mascarpone cheese

1 cup of ricotta cheese

Approximately 20 crostinis

1/2 cup cut chives

3 tablespoons of balsamic vinegar

Directions:

Add together the small whole grapes (note if using larger grapes, cut in half or quarters), cranberries and balsamic vinegar in a saucepan and bring to simmer on medium-high heat. Cut back to medium-low heat and continue cooking for 10 minutes, stirring occasionally. Toward the end of cooking time, crush grapes slightly as they start to swell allowing the juice to run and mix with vinegar.

Prepare cheese by adding cheeses to mixing bowl and cream together until blended uniformly. Set cheese mixture aside in refrigerator to keep cool.

Cut chives into smaller pieces.

Assemble crostini by spreading cheese on toast then add a dollop of the grape-cranberry mixture on top. Garnish with chives.
