Crunchy Carrot Salad

Looking for something to replace the crunch of cookies or chips?  This recipe which is a little salty and a little sweet will get the job done.  I’ve replaced the traditional raisins with currents and mayonnaise with olive oil to give it a healthier profile.  I’ve added the very popular apple cider vinegar for some zing.  The Easter bunny will be fighting you for the carrots to this recipe.  Enjoy this dish as a snack, or as an accompaniment to a main dish.

Ingredients:

  • 2 cups of carrots

  • 2 Tablespoons currents

  • 2 Tablespoons apple cider vinegar

  • 1 Tablespoon of olive oil

  • A pinch of salt

 

Buy shredded carrots or shred you own using a food processor or high powdered blender, pour into bowl.  Add remaining ingredients and blend well.
