Crazy Chickpea Cakes
On the weekends when you have a bit of down time, try making this fun and easy recipe with your children. It is a mom approved way to let your children get their hands messy and play with their food which is a good thing.
Gather ingredients:

2/3 cup cooked and shelled edamame beans

1 can of garbanzo beans (chick peas) drained and rinsed and smashed

½ cup shredded Cheddar cheese

½ cup shredded Gouda cheese

1 small red onion, finely chopped
-
2 eggs
-
½ tsp salt
Topping:

1 large Avocado, sliced

3 Roma tomatoes, chopped
Method:

Preheat oven to 350 degrees.

Place garbanzo beans in large glass bowl and let children take turns mashing and squishing until all beans are crushed. We used a potato masher.

Chop edamame beans in half and add to bowl.

Fold remaining ingredients into bowl and let children take turns squishing and mixing until blended thoroughly.

Prepare baking sheet with parchment paper.

Use a 1/3-1/2 cup measuring cup to scoop out individual cakes.

Arrange into little mounds on baking sheet and let children gently press down on the cake to flatten the top and spread the ingredients into an even thickness.

Next place cakes into preheated oven and bake for approximately 22-24 minutes or until edges begin turning a golden brown.
While the cakes are baking, chop Roma tomatoes into small bite size pieces and slice avocado.
Top warm cakes with chopped tomatoes and sliced avocado.
