Corn Salad
Serves 4
225 calories and 7 grams of protein

Ingredients for salad
Combine:
2 Cups frozen corn brought to a boil for about 2 minutes then drained and cooled or fresh off Cobb cooked as desired and cooled
1 Cucumber peeled and diced
2 sprigs of Green Onion trimmed and sliced
1 Avocado diced
1 cup of Cherry Tomatoes halved or quartered
Cilantro as garnish
Ingredients for Dressing
Combine and mix into corn mixture:
1 t Cumin
2 T Olive Oil
2 T Red Wine Vinegar
1 t salt
